FOTM October – Vanilla
When you think of fall, the flavors that probably come to mind would be pumpkin spice or nutmeg. But this month, we are kicking it old school with an all-time favorite, Vanilla. Sure, you may think that Vanilla is so… Vanilla, but there is so much warmth that is Vanilla that makes it perfect for the fall season.
Vanilla is used all throughout the food industry from beverages to baked goods. The vanilla that goes into these products is mainly there to enhance and round out the flavor profiles. Vanilla can enhance the sweetness of subtle flavors or cut through the sharpness of certain spices. Whatever you choose to add Vanilla too, it will bring out the fall in any dish.
Now, there are different kinds of Vanilla but the top two profiles are the madagascar bourbon vanilla and the tahitian vanilla. Our skilled Flavorists described the profiles of both as the following:
Madagascar Bourbon Vanilla– Deep, rich, and cream flavor with notes of raisins and dried fruits. The aroma was sweet and buttery.
Tahitian Vanilla – Floral, cherry notes with hints of licorice, and wine.
